Nutty Vanilla Muffins

Ingredients to make Nutty vanilla muffins:
¼ cup Water
7 tbsp oil
½ cup of almonds/walnuts/pistachios/cashews (any of these will make delicious additions to muffins)
Optional: chocolate chips to taste
Steps to make Nutty vanilla muffins:
1.
Preheat your oven to 200°C.

Roast the nuts on a hot tawa without oil for 2-3 minutes until they are lightly toasted. Roughly chop the nuts into small pieces.

In a mixing bowl, combine the Muffin mix, almond milk, and water until no lumps remain.

Add the oil & continue to whisk for a few more minutes. Fold in the chopped nuts.
5.
Pour the batter into greased muffin molds and bake for 20 minutes. Insert a toothpick in the center of a muffin. If it comes out clean, it's ready.
6.
Enjoy warm or store for later. These muffins stay fresh for 3 days in the fridge.
