Ingredients to make Mediterranean omelette:

6 eggs
½ cup of your favourite vegetables (bell peppers, tomato, mushroom, spinach, etc)
¼ cup shredded mozzarella
½ tsp Spice Rack Mediterranean Seasoning

½ tsp

Steps to make Mediterranean omelette:

Beat the eggs in a bowl until they are well combined.
Heat oil in a pan
Stir fry some chopped bell peppers, broccoli, carrots, beans, etc. Add the Mediterranean seasoning and a pinch of salt & pepper.
Pour the beaten eggs over the veggies and cover the pan with a lid. Cook on medium heat until the eggs are set.
Before flipping the omelette, add shredded cheese and sprinkle dried oregano to amplify the flavours.
Divide the omelette into quarters and serve with hot, buttery toast.
