Lactose Free Kheer Recipe

Ingredients to make Lactose free kheer:
¼ cup basmati rice
1 Liter (1 package) Raw Pressery Unsweetened Almond Beverages
½ green cardamom (elaichi), crushed
Optional: 2-3 strands of saffron
5-6 tbsp sugar
2 tbsp sliced almonds
Steps to make Lactose free kheer:
1.
Wash the rice and soak it for 15-20 minutes in water.

If you are using saffron, add a few strands to 1-2 tbsp of Almond Beverage and let it rest for the same amount of time.
3.
Heat the remaining Almond Beverage and crushed elaichi in a large saucepan on low heat until it begins to simmer. Stir a few times to prevent the milk from forming a skin on top or sticking to the pan. Avoid using high heat as this can cause the milk to burn at the bottom of the pan.

Drain the rice and add it to the hot milk with sugar.

Cook the kheer on low heat for about 15-20 minutes or until the rice is almost cooked through. Stir often.
6.
Add some sliced almonds and saffron at this point and continue cooking until the rice is soft.
7.
You can mash the kheer at this point to achieve a thicker texture.
8.
Garnish it with more sliced almonds.
9.
Enjoy it hot or chill it for later!
