Ingredients to make Bangin’ baingan casserole:

Wingreens Farms Basil Pesto
2 eggplants, sliced

1 beaten egg
1 cup grated cheese
A handful of olives (thinly sliced)
2 tbsp olive oil

Steps to make Bangin’ baingan casserole:

Slice the eggplant into medium-sized rounds and dip one side of each slice in olive oil and the egg mixture.
Layer one set of the slices in a casserole and add pesto and grated cheese generously over them. Season with salt, pepper, and Italian Herb Blend.
Build a second layer of eggplant slices in the same way and layer them with the toppings. Scatter olives on top and drizzle with some olive oil and cheese.
Bake at 190ºC until the eggplant slices are soft and cooked through (25 minutes).
Serve hot!
